Unlike some yeasts, I don't have to worry about pouring sediment into my glass and clouding a good ale. I went back to this after using several liquid ale yeasts and had forgotten how well it clears up and really compacts at the bottom of my bottles. The only other yeast I have found to ferment as fast as Nottingham is WL002.Cheers!
Im definitely going to experiment more with this yeast. The smells coming out of my beer are wonderful, and it tastes great. But It appears the Nottingham was finished within 4 days, at least most all of the krausen has fallen anyway. I broke my hydrometer during cleaning, so Im weary as to whether the US05 is handling the 1.100 or not. The 1.100 was bubbling, but definitely not half as much activity as the 1.060! Very interesting indeed. I sure am glad I went to check on them the next day, because I needed a blow off tube for the 1.060 Nottingham, it took off like a beast! No explosions, but krausen was coming out of the airlock. I put a blow off tube on the 1.100 and an airlock on the 1.060.
